For electrics there used to be Ed Roman's store. He makes his own models. Just take him with a grain of salt, don't take him personally.

I believe Ed Roman passed away in 2011 but his shop still is still going. His shop creates some of the best guitars, both electric and acoustic, to be found anywhere. If you can somehow manage to get a tour it would be well worth the trip.
