I'm repairing a Martin D-28 from late '91 and it isn't responding like nitro. I tried using butyl cellosove and it just turned the rosewood black. I understand they went to another finish (polyester?) around '94. Is it possible they could have done so earlier?

As far as I know the guitars made in Nazareth have been Nitro lacquer for years.

The top coat should be nitro lacquer. The problem you are describing my be due to the vinyl sealer.

I thought the vinyl sealer might be the culprit as well.
