Taylor isn't always using no water....and in particular they are decidedly using it on venetian cutaways.

Thanks for the info. From Taylo's vids, which say they had stopped using water, I thought they had. I guess they have changed since the vids were shop. Just curious, what is your source of info for Taylor's use of some water in side bending?

I can't speak for the the standard bending but they never did it with the cutaways which aren't on the videos. I saw the cutaway benders in the winter of 2009 or thereabouts and they were sticking the cutaway end in a drywall bucket filled with water, prior to bending.

They're using water. To what extent currently, I don't know.

Sounds like they are/sere using water on cut-away sides and are not/were not using water on the remainder of sides (i.e. the majority of side are not cut-away).
