Two cherries makes chisels that have been polished, which is the kind you will find at Bauhaus in Germany (or at flea markets, for a lower price than Bauhaus sells them for when you can find them! I found one booth at the flea market in Trepow Park sells a pile of them, all for 10 euros each), be aware that THEY ARE NOT COMPLETELY FLAT at the back! All they did from what I can tell is they belt sanded the chisel then polished it on a polishing wheel. If you eyeball it, or if you lap it with a diamond plate it will be obvious that the back isn't completely flat.

So for optimum usage, do flatten the back of the chisel, even though it looks really good out of the box.

But I am sure you guys already know this...

The back does not , IMO, need to be "completely" flat.

As long as there is an area extending back for say 1/2 " which is fully lapped, and as long as the back of the chisel is more concave than convex, and isn't totally banana shaped, you are good to go.

I have some Two Cherries chisels, and they are from "way back".
I have some "Stag" stamped chisels also, I always guessed that they were another product of two cherries.

Not very often, because they are very hard, but I just flatten the backs on my stationary disc sander, then on to the stone.

The thing is, the two cherries chisel have slightly rounded edges (as in convex) due to the polishing process, especially near the business end. So it still needs lapping. Also, there are tiny waves across the width of the chisel which I think also comes from the polishing process.

Right now I am using the chisel to break in my new 8000 grit diamond plate... not sure how long it's going to take but the steel isn't coming out like a mirror (like the rest of the chisel) so I guess it will need more work.

The scratch that the 8000 grit diamond plate I have makes seems to be more like a 1500 grit sandpaper rather than a 8000 grit stone. I have read that they need to be broken in which is why I was flattening the back of my chisel on it...

I normally wouldn't buy pre-polished tools too but the ones sold locally in Germany are all polished. I suppose they look better so more people would buy them. Online retailers sells them for far higher price than places like Bauhaus or flea markets sells them for.
