Just curious, do you guys usuall go with one dish in a given radius or a couple? Meaning One for gluing up and one for Sanding. Not sure if I should get one or two dishes of the radiuses that I want.

I personally use just one. It has sandpaper glued to it, but I have some thin padding that I lay over the sandpaper when I use it for gluing braces in my go-bar deck.

I make LOTS of dishes and used to have two of each of my radii, but now I just have one of each and advise my customers that one of each radius is enough and just do as Charlie (and I) do and put paper over the sandpaper when using it for gluing. I find that the paper that peels off the back of the 24" sandpaper discs that I and John Hall and others sell works great as the barrier.
