I have on the left a piece of maple from stewmac and on the right maple from LMI. The stewmac, as you can see, back sawn and the one on the right is quarter sawn. What is the preferred choice of the professional luthier?

Actually the one from SM is riff sawn or at least every one i have ever recived from them. (look at theend grain to tell) it is an angle closer to flat than LMIs but I suspect that LMIs is also riff sawn just at an angle closer to quarter that the SM

You are probably correct. I can tell that the end grain on the right one are riff sawn also. The one on the right's grain is much straighter. Which would you use?

Because of the stresses imposed by the strings, a quartersawn bridgeplate will tend to crack along a grain line. A riftsawn plate is less likely to do so, at least in theory.
