I'm not sure if this is a problem but as I was thicknessing the EIR side the wood seem to develop a warp that gets worse as I thin it... It's not really resisting and I can easily press it flat with a little bit of pressure, and I figure that I can correct it at the bending iron. Are wraped sides an issue? The wood really wants to bend... could almost bend it cold.

I normally wait a bit before I start on it but the wood is dry and I don't want to sit idle for 2 months while the wood gets used to Taiwan...

Go ahead and bend it. Sometimes wood like that will really want to twist and you end up with 2 different bouts for 2 different Guitars. Don't know what it's like with a bending machine (might be easier) but on an iron you have a certain amount of scope for correcting any twist. Sometimes it's a battle. Only one way to find out.

I don't worry about RH for the sides. It's going to get wetted and heated up anyway.

I think it will be OK after bending. Maybe keep a straight edge handy to see if you get any cupping.

If timber has differential residual stress (they all do, some more than others), it can move as material is removed.
It should not be a problem once the sides are bent and clamped in a form, but getting to that point may not be easy!
