I'm currently working on a dread, east indian rosewood with flamed maple bindings. How do I keep the sanding dust from the EIR from getting into the exposed endgrain of the maple?

Hi Steve, I am having the same problem right now. But it is on an ebony F/B with flamed maple binding.
Using a scraper or razor blade as a scraper when the sanding is complete seemed to work the best.

I usually put a coat or two of shellac on the bindings with an artist brush.
You still have to sand and scrape, but I think it helps.

seal the maple with shellac.
Then sand the rosewood so it's ready for finish.
seal the rosewood.(Shellac)

Then sand your bindings.
Scraping can create high & low spots(on curly woods) -plus tear out.

Works for me.
