I have a neck already build that is 14.5" from nut to body. Leaving 13.2" to the saddle, which seems doable.

Also about how much of the bridge should cross the X Braces and is that a better method than using the holes for the strings to determine the x-brace placement?

I have a nice matching Macassar bridge and fretboard to match this B&S. I do prefer things to match but the black ebony wouldn't bother me either.
