If you're into sunbursts, Don McRostie's video is quite good (both technique & mixing).

Robbie O'Brien has a good one that covers the gamut of finish types at high level. I learned a lot from it, but I'm a newb so take what I say with a grain of salt.

Jamie Boss has one that focuses on waterborne nitro. He covers both spraying and brushing, and the brushing portion is what I bought the video for. I've been using his brushing method with some minor modifications and have found it to be pretty user friendly. He sells his DVDs on his web site: http://www.hotstringsguitar.com/

Woody Brackett put out a 2 DVD set last year on finishing using sprayed oil varnish. It's kind of a real-time rendition of the whole process. I have found it very helpful in that he shows all of the prep and between coat sanding as well as buffing. It is long, but gives you a real feel for what is involved. It is like being in the shop with the builder during the process. It is also very reasonably priced.

Robbie O'briens is great because it covers so many different finishes.
Jeff Jewitts recent video on general book and video on spraying is great.
