LMI sells a 7 degree dovetail cutter and Stewmac 10 degree.

What angle is your preference and why?

Martin uses 10 degree. I have the StewMac cutter and it works great. I thought you were doing a bolt on Dave.

I also use the StewMac cutter and templates. I usually still have to do some hand refining of the neck to get it sitting just right.
