Let's talk about carbon fibre.

I have seen builders use it to reinforce the neck. What else do people use it for when building guitars and why?

Any methods, general tips, advice on purchasing etc.

I've used carbon fibre cloth interleaved between the wood laminations on laminated sides and backs. Gives them that tupperware tap tone. laughing6-hehe . It does give an added toughness to the sides, like a continuous side tape, and the sides and back can be made lighter and thinner if so desired.
