Are those a little larger than average? Does that affect volume much on an archtop?

The name catgut is confusing. There are two explanations for the mix up.

Catgut is an abbreviation of the word cattle gut. Gut strings are made from sheep or goat intestines, in the past even from horse, mule or donkey intestines.

Otherwise it could be from the word kitgut or kitstring. Kit meant fiddle, not kitten.

So is it skin deep or did you continue the theme through the carve(graduations/bracing)...

because to me this represents excellence within a style sort of 2010 Avant-Nouveau...

Very difficult carve if done by hand. Excellent! I like the idea of the center "strip" stiffener. You might experiment with pulling that farther back from the bridge area though. On mandolins, the center bridge area is usually carved a bit thinner than the surrounding areas. My guess is that all this would allow you to carve the whole plate thinner. Not sure I buy into thin plates though...
What does it sound like compared to other new archtops?

It is all handcarved,the facettes are carved inside and out, there is no center strip, and the braces are all split like in all my guitars.
In addition of the satisfaction to express oneself artistically , the end result surpassed my expectations. it is very open sounding, it breathes and the separation is very define.
The carving idea is based on a maple leaf , it is a very strong membrane with flexibility.
bottom line I am having a blast,exploring and figuring things out, success and failure! This process reminds me why I am doing this and brings the excitement back!

Beautiful work. I've seen one other guitar with facets carverd into the top and back plates and while it was done very cleanly, it was not to the level of artistry that you have. Would really like to see nad hear this one live.
