Got to thinking about "electrifying" my harp and then it occurs to me that the piezo strips are prolly some standard length. What if they do not fit in my non-standard harp sadde slot?

You could check with K&K Sound to see if they have some bridge plate transducers. I think they sound much better than the under saddle transducers.

I would use two, one under the main string bridge and one under the bass string bridge. Send the signals out to two jacks or a stereo jack and feed to a two channel preamp so the sound of each string set can be EQed alone. The K&K mini westerns might also work, but you would need 2 sets and a stereo jack or one for each. The K&K works well even without a pre amp.

You might contact Steven Bennett what he uses on his harps sounds real good.

You might see what 'Pick-up the World' (PUTW) can do. They make pickups for just about every kind of instrument. I've used their Guitar stuff and had good success with it.

If you wanted to use the K&Ks they are high enough impedance that you might be able connect 2 sets in parallel. You could check with the folks at K&K. They have been very helpful to me in the past.

Well, as it turns out (and I knew this when I asked) PUTW makes a special setup for Harp Guitars, its advertized at harpguitars.net. My question was kind of generic. The saddle strips are a non-adjustable size, correct? Its not that you can "clip" them to size, right? I do not know much about guitar electrification, so thus the newbie questions.

When I built my bridge, it never occurred to me to consider the size of the piezo strip (length). It may be OK. And, AIR, there were bridge plate transducers offered as well.

Many manufacturers can make pickups to a custom length. You have to contact their technical service line to find out who to talk to. Some of the coax style pickups have extra length.

The proper question isn't whether to amplify but how. How do you intend to use this and in what context, i.e., what is the rest of your intended signal path from the instrument to the PA. All of these pickups will do well depending upon the application and the quality of the components in the signal path.
