I'm wanting to try a bolt-on neck.

For those of you who dont drill until the body is asembled,
what kind of jigs are you guys using for keeping the holes accurately aligned and straight
through the neck block and into the neck itself?

Photos would be great.

Do a search here and at MIMF and you'll get a ton of ideas. Check Bill Cumpiano's website.

Hello Runamuck,

If you are looking for a method of doing so without using a mortise and tenon, here is a great idea from Liutaio Mottola.

See if this works for you,

Cheers,

Dave

Or have a look at my method for archtops (last pg. of tutorials section).
Works for flattops too.

Here's my jig that slips into the body mortise with drill bushings for a 1/4" bit. Excuse the slightly blurred photo.
Once drilled, I fit the neck tenon into the slot and use center points from inside the guitar to mark the hole centers on the face of the tenon. Then I follow the Cumpiano method for securing the neck in place...after all is finished but prior to fretting.
