Time studies are tricky to do alone. I would get a cheap stop watch and hang it at your bench....someplace obvious You might remember to start/stop it for each task in the build. Be sure you include the time setting up for the task

And don't forget admin time. Sometimes it's after lunch before I pick up any tools at all...

Years ago when I was interested in doing this full time, I asked a local maker, John McQuarrie of Northwood Guitars, Ed might know him about how long it takes him to build guitars. He's all about the production and has it down to a well oiled machine. Including finish and set up he was just of 35 hours per guitar.....He did source some of his parts partially shaped. I know he bought neck stock as a pre-cut out blank but still had work to do. He also sourced his brace wood from some company that profiled the taper and arc (top and back arc) on the braces to his standard..... that would knock down some time.
He does all his own finishing though which I'm blown away by.
