For my first build I've been using Titebond (I believe type II) for general glue up. Is this okay? Should I be using something else. I build furniture and have always used Titebond with no problems; but I have never before built something as delicate as an acoustic guitar.

Wrong glue. You should only be using the original version of Titebond for guitars. The Titebond II will creep and is not as hard as the Original.

Also, hot hide glue is great stuff, but you will be fine with Titebond for now.

The only places I don't like using water based glue are the decorative back strip (if you have one) & the fingerboard to neck joint.
I find water based glues shrink as they dry & cause a slight kink along the back strip. I use epoxy or polyurethane (Gorilla) glue instead.
I have never had a problem gluing the fingerboard with aliphatic resin glue (I prefer Elmer's to Titebond, FWIW). But many, smarter than I, have said it can cause warping by releasing moisture into the neck & fingerboard.
I bolt on my fingerboard extension, but If you glue it down, you should stick with (Please excuse the awful pun) yellow glue for this job, in case the neck needs to be removed.
I use epoxy to laminate my neck & heel blocks also.
