Good topic Image Hesh, and enlightening to see the variety of responses.

For me it's:
1. Trying to cut perfect miters on the purfling at the end graft... gaah
2. Gluing up the binding/purfling around a tight waist and getting it all held in place without twisting or gaps... gaah

These two operations cause me the most anxiety.

1) Making jigs and/or molds

2) Finishing prep and final polish (spraying itself is kinda fun)

+1 for sanding. Just finished sanding back after z-poxy pore filling, and I was hating every minute.

Now neck carving? Love it! Grab the spokeshave and have at it!

Does sharpening scrapers and chisels count? I used to really enjoy getting those things perfect but now that seems to just take time away from building.

Fitting the neck was a real pain. Two steps forward, one step back, rinse and repeat.

Pore filling is at the top of my list of things I hate. I'm not fond of binding either... I love finishing with FP but I hate sanding out nitro...

Ok, now that i have something like a total of 6 hours of guitar building under my belt i feel i am completely qualified to make the following additions to this thread.

1.) i hate not knowing what i am doing.
2.) I hate not having done this twenty years ago when i could see what i am not doing right!

I certainly am glad i am not making a guitar right off the bat and am satisfied with building a UGLO (Unidentified Guitar-Like Object).

Wet sanding prior to finish buff-out.

Making bending forms is a close second - I just want to get on with the actual bending!
