I was just looking at my D-18, the tang of the fret is invisible on the edge of the fretboard. But on my maple necked strat you can see the tang. How does Martin hide the tang?

Pretty common on "non bound" fingerboards to hide the tang by actually binding the fingerboard with the same wood that the fingerboard is made from. Used to do it all the time on Stella 12 strings because I hated tangs showing and the complexities they created in lacquering.

If it is ebony a cheat without binding is to cut the tangs back like on a bound fretboard and then fill with ebony dust and CA.

Martin cnc's the slot short of the end and nips the fret tangs. In essence it is done the same as a bound board without the binding.
