Just wanting to confirm...

Orange peel in the color coat is not the end of the world? The clear coat will fill the dips and valleys, and will level sand nicely once I have sufficient coats?

I would sand it flush with 600-1000 grit before clear coats.

I have to disagree. I never sand color coats, the risk of uneven color is just too great. If something happens during color coating like a run or some foreign object I sand the color coat off and start over. Put a couple of clear coats over it and level sand.
