+1 on leaving the liquid, bottled, Hide Glue on the shelf at the store - it's not the same as HHG by any means...
We all build at least slightly differently so glue choices are a personal preference thing as well as what's best for the job.
For all of time.... guitars have been built with the idea of serviceability which means building AND gluing in a manner that can be serviced into the future. HHG is great for this in so much as it can be released with heat and moisture and even reactivated and added to 50 years down the road.
Titebond original, not the II or III etc.
Here is a brief glance at what glues I use where and again others are likely using other glues in other ways - there is NO one accepted way to do most of these things.
Braces, bridge plate, bridge - HHG (the real stuff...)
Joining plates - HHG or Titebond and when I mention Titebond I always mean Titebond original
fret board to the neck - Titebond or quality epoxy. Headed back to Titebond for this after a good conversation with Link.
Blocks to the rim - Titebond
headplates - Titebond
linings - Titebond
bindings - Titebond
label - 3M spray stuff
rosette - Titebond (I use wood rosettes)
Neck to body including dovetail and extension - HHG or Titebond
When considering all of these different applications keep in mind what may need to be serviced in the future. A good example of this is that acoustics usually need a neck reset 10 - 40 years out so the glue should be serviceable such as HHG or Titebond.
An example of something that likely would not need to be serviced is the rosette and some folks use CA for this and the same holds true with bindings. I personally use Titebond for both rosettes and bindings and again it's some personal preference and sometimes application driven as well. I use wood bindings and rosettes so Titebond works for me.

Haven't tried Titebond Extend but the name sounds like a commercial for an ED drug so I'm staying away from it.....
