Cité de la musique. Some very serious instruments in there. One of the worlds greatest collections.

Yes, that's the best place if you want to see nice instruments.
Inside Paris, the only place where you will find guitars everywhere is in Pigalle, but it's just a street full of shops (rue de douai), not really interesting in terms of lutherie.
You can find luthiers in the rue de Rome (8e arrondissement), some guitar makers, some quatuor luthiers too.

i´d check out some gypsy jazz... la chop des puces, aux petits joeurs, atelier charonne...

if you´re into classicals, you can try reaching dominique field but i guess it should be difficult : http://www.guitarepassion.com/index.php/Dominique_Field

bon voyage!

Hi, I agree, Cité de la musique and his museum is a must see. You could also go to the library, not the shop but the "documentation center" where you could find a lot of plans and books (this library is hard to find, ask for it).
Pigalle coud be a walk but nothing very exciting, well for lutherie at least.

La galerie Véro-Dodat is a very nice street with a great shop for vintage instruments :
