In all the plans of acoustics I have, the neckblock is fairly wide in relation to the neck itself. I can't get my head around what one should look like when doing a cutaway.
Can you post pics of how you approach this, please?

I measure half the fretboard at the 14th fret (or 12 if a 12 fretter) and deduct for the thickness of the sides then I cut the neck block to that size on the side of the cutaway. Normally a few thousands thicker and sand to final dimension once fitting the neck dry. Sorry no pics on hand.

It's not a close up but you can get an idea. The block is wider on the non cutaway side. I mark the centerline and measure out half the fretboard width at the 12th or 14th depending on what I'm making then use a template of the cutaway to draw in the curve, intersecting at the fb width mark. Then trim the block to the line. Also you want to take it in enough to compensate for the sides so you don't get a bump up from the neck to body. A nice smooth transition is always superior to having a step. Hope that helps.

How do you dry fit the neck befor the cut away side is glued onto the block?

I have been shooting for the cut away side to stick out from the neck block around .020 to .050 on the finished product . Seems more deliberate looking and doesn't get into the way at all . Completely flush is cool, but if its off by even .010, it could start to look funky. Thoughts?

sand it flush after fitting? That's what I did on #2. Leave the side slightly proud and sand it to perfection after fitting the neck.
