I prefer spring steel for the support they provide.

Tempered stainless is what I use. It supports well but doesn't stain or rust.

John , are the stainless a spring steel I.e won't deform too much?

I have the same set for 5 years now. I get about 1000 bends before replacing.
If you have tempered . you will be good just cover the spring steel with foil.
I agree spring steel won't deform
