the question might be stupid, but still ! :D . Can I, as an example, put wooden "diamonds" between the braces of the back instead of the centerceam ? just as on a top. ?

Well this is the seam of the guitar that gets the most shock inpact in normal wear and tear. I think I would keep a cross grain graft thank you :D

Don Williams always seems to do something unique with the centerseam (although the primary center seam is always cross-grained.) He'll use a unique wood choice, or in the example of the guitar he built for me, he inlayed a section of the binding/purfling that was used on the guitar in a way that was visible through the soundhole. I always get a lot of compliments on that feature from fellow guitar addicts.
