.095 - 1.05 is a good window for a steel string bridge patch

Wow, that's a pretty big swing. Is that for heavy strings?

It might help with replies if you ask for model you are building and bridge plate material to be used. Perhaps if you are more specific?

I have use 2.5mm EIR, 3mm Maple (OMs), some people use different Rosewoods, BRW, Cocobolo etc.
Also some people laminate bridge plates, with or without spruce in the laminate, etc.

The name catgut is confusing. There are two explanations for the mix up.

Catgut is an abbreviation of the word cattle gut. Gut strings are made from sheep or goat intestines, in the past even from horse, mule or donkey intestines.

Otherwise it could be from the word kitgut or kitstring. Kit meant fiddle, not kitten.

Wow, what a difference a decimal point can make. I meant to say .105

The question is not how thick, but how stiff. Unfortunately I can't tell you how stiff, because I do it by feel.
